I did say I was going to stay away from the computer for a few days but I can't just resist a reader's request for a fish or chicken recipe for the holidays. Here you go Amiel. I hope this will help. (I will post the fish recipe sometime this week). To my friends in blogosphere, I promise I will pay you a visit sometime these days.
2 tbsp of olive oil
about 1 lb of chicken, chopped in small pcs.
1 tsp of finely chopped ginger
1/2 cup of peanut butter
2 tbsp of Hoisin Sauce (found in most Chinese groceries)
1 tbsp of Lemon Juice or Calamansi Juice
2 tbsp of finely chopped green onions
soy sauce to taste
Heat oil in a pan. Add chicken and cook for about 10 minutes making sure that chicken does not go dry. If it does add about 2 tbsp of water every once in a while until chicken is cooked. Add ginger, peanut butter and Hoisin Sauce and lemon juice. Cover pan and cook for another 5 minutes stirring occasionally to make sure that the peanut sauce will not stick to the bottom of the pan. Add small amounts of water once in a while if needed. Season with soy sauce. Turn off stove and add green onions before serving. Chicken with Peanut Butter and Hoisin Sauce

This inspired me. Instead of the droll, dry chicken breasts I normally serve when I'm in a hurry, I decided to make a sauce for them with the ingredients you listed. I didn't have Hoisin Sauce, but I added a lot of spices. Wow, it was really good! Thank you for the inspiration, Ting. (The FRE liked it too.)

Currently , peanuts are one of the few things I can taste. I tried this recipe as an alternative to the long prep needed for Kare-Kare... and I LOOOVE it. So did my sister, and I definitely plan on making it again.
I am so grateful for your blog because I love Filipino food, but my dad would rather cook the dishes for me on request than show me how to make them myself. Eventually, I'm sure I'll get around to cooking every recipe on your blog.

Hi Laura. Thanks for the visit. Indeed, it has a resemblance to Kare-kare, doesn't it?
I tinkered with this recipe recently because I had some leftover spinach.
Instead of chicken, I sauteed firm tofu in the ginger and garlic, and added fresh coriander/cilantro. I also thinned out the sauce with chicken broth, and dropped in the leftover spinach.
Because the tofu requires less cooking time, it's good for a quick weeknight meal, and you don't have to worry so much about the peanut butter sauce burning the bottom of the pan.
